2018 Heathcote Marsanne
Grown by Hugh at Humis Vineyard in northern Heathcote. The place in on the red dirt, facing Mount Camel.
Fruit was picked and thrown into an open fermenter, on skins. We hand plunged the ferment twice, daily for over two weeks. Transferred to old wood, on gross lees and left there for over a year. We didn’t top the barrels in that time and as a result, they formed a healthy layer of flor yeast.
Racked only once (the day before bottling) Only 20ppm S02 added and nothing else.
